Snacking On

We are staying cool with homemade ice cream.  I bought an ice cream maker the beginning of summer and we have finally pulled it out to make homemade ice cream with the strawberries we picked a few weeks ago.  The kids are convinced that we don't ever have to buy ice cream from the store again and have been thinking up a variety of ice cream concoction we can make. 




































Strawberry Ice Cream
2 cups of frozen strawberries
Juice from half of lemon
1 cup of sugar, divided
1 cup of whole milk
2 cups of heavy whipping cream
1 tsp of pure vanilla

In bowl, combine strawberries, lemon and 1/3 sugar.  Let strawberries thaw out and macerate with the lemon juice on counter.  After, put in blender (Vita mix or Blendtec) and blend until smooth.

In a medium bowl, use a hand mixer to combine milk and remaining sugar and mix until sugar dissolves.  Then stir in heavy cream, strawberry mixture and vanilla.  Pour into ice cream machine and follow directions.

  2. Sounds so yummy!

    I've seriously always wanted to buy one and try this. Maybe next summer. Homemade ice cream is just too good to pass up. And with my kids being slightly older - they could really help with the ingredients.
